Executive Chef – Michael Dunton
Raised in New England, Chef Mike grew up fishing and clamming in Cape Cod, where he fell in love with fresh seafood and the creations his family made through the years. An Armenian and Italian heritage meant food was always a big production in his family, with every dish made from scratch. Chef Mike’s culinary experience began from his childhood days helping in the kitchen at home and at the restaurants his mother worked. For his professional culinary training he attended a technical high school and Johnson & Wales University, with a focus on baking and pastry. Chef Mike served as the Resort Executive Chef at the JW Marriott Grande Lakes and the Renaissance Orlando at SeaWorld before joining the team at Rosen Shingle Creek in December of 2021. His Italian heritage is on full display at Rosen Shingle Creek’s Tuscan-inspired Cala Bella, the resort’s AAA Four Diamond signature Italian restaurant. Igniting flavor, creating culinary magic and bringing a sense of family to his craft are Chef Mike’s ways of giving back to the community.
