Jorge Oliveira, Executive Chef

Executive Chef Jorge Oliveira oversees all of the restaurant and catering options at the AAA Four Diamond Rosen Shingle Creek®. The extensive array includes a full-service buffet restaurant Cafe Osceola, numerous themed dining including Mi Casa Tequila Taqueria, Tobias Burgers and Brews and Banrai Sushi and two award-winning AAA Four Diamond restaurants A Land Remembered classic steakhouse and Cala Bella Italian bistro, among numerous options.  Chef oversees catering for the 1501-room hotel’s meetings and special events where guests range from 10 to 10,000.  He and his team also take great pride in celebrating the holidays with decadent buffets known by locals as the finest in Orlando.

“The wonderful thing about working for Mr. Rosen and his hotels,” explained Chef Jorge, “is that the sky is the limit when it comes to satisfying each guest.  If I need to buy lobster at $25 a pound, it’s my decision. We always strive to do the best and beyond at each Rosen Hotels & Resorts®.”

Chef Jorge joined the Rosen family in 1991 and soon assisted in opening the 800-room Rosen Plaza®, proving to Rosen that although it was early in his career, the 28-year-old exhibited talent beyond his years. In 1995, Chef Jorge had the opportunity to serve on the pre-opening team at the 1334-room Rosen Centre®.   In 2005, Chef was asked to help Rosen fulfill his grand vision for the company’s third convention hotel, the AAA Four Diamond Rosen Shingle Creek.

Chef Jorge received his culinary degree from Johnson and Wales. While attending school, Jorge had the opportunity to apprentice at many fine-dining restaurants, focusing on French and Northern Italian cuisine. He began his career with Hilton Hotels in Dallas training under a master chef in one of its large convention centers and ultimately completed the Hilton Hotels management program. Over the next five years, Oliveira continued to work for Hilton at the Flamingo Hilton in Las Vegas, Trump Marina in Atlantic City and the Palmer House in Chicago, before ultimately joining Rosen Hotels & Resorts.
