Chef Darrell Mason discovered his love of food as a child when he would watch his grandfather make fresh tortillas in a cast iron pan and serve them warm with a dab of butter. Drawing further inspiration from his mother and aunt, Chef Darrell chose a career in the culinary arts. He started by completing a hospitality management degree from the Culinary Institute of America. He worked at various hotels before joining the Rosen Shingle Creek® team in 2022. Realizing that flexibility and creativity are key, he is always seeking out new cooking techniques and cuisines. His dedication to innovation once even led him to cater an event in an off-the-grid venue in the mountains using a fire pit. In his time with Rosen Hotels & Resorts, Chef Darrell has been impressed by his team’s pride in the company and drive to give back to the Orlando community.
