Here’s a sneak peek at our beautiful 2026 Easter brunch menu at Rosen Shingle Creek.

Key Takeaways

Raise a Glass to Easter Sunday Brunch

Celebratory holidays demand a celebratory drink. At our beautiful brunch, we’re delighted to offer you an array of unlimited libations to pair with your meal.

Our mimosa and bellini bar blends refreshing sparkling wine with your choice of fruity flavoring.

Mix your bubbly with orange, grapefruit, cranberry, or pineapple juice for a mesmerizing mimosa, or opt for a bellini made with a thicker white peach, strawberry, pear, or mango purée.

If you prefer your cocktail on the savory side, visit the Bloody Mary bar. Choose between regular, spicy, or smoky Bloody Mary mix and adorn your drink with garnishes including housemade jerky, bacon skewers, chorizo and Manchego skewers, and stuffed olives.

Begin Your Day with Our Breakfast Display

Brunch just wouldn’t be brunch without its fair share of breakfast options.

Reimagine the most important meal of the day with classic dishes including eggs benedict, fluffy homemade biscuits with sausage gravy, and a smoked salmon bagel with whipped caper cream cheese and juicy tomato.

If you prefer your breakfast on the sweeter side, begin with a slice of cinnamon babka French toast topped with Turkish coffee, whipped mascarpone, pistachio, and an apple and sugarcane compote. Hot beignets with powdered sugar are another house favorite.

One of our talented chefs will be making crepes to order at a designated station. Top delicate, warm crepes with your choice of toppings, including mascarpone cream, fruits like bananas, strawberries, and mango, or caramel and chocolate sauce.

Transition from breakfast to lunch fare with elegant brunch plates like ham cured smoked baby back ribs with a bourbon and pineapple glaze, flaky and tender beef wellington, and a grilled lamb loin kabob served with creamy tzatziki.

Enjoy Inspired Entrees

Many of the flavors on our Easter menu reflect the style of its host restaurant, Cala Bella. You’ll find a variety of Italian and Mediterranean flavors and fresh ingredients, some of which are grown onsite in our very own garden, Emma’s Creekside Farm.

Enjoy an array of fresh veggie-forward dishes including a beet salad with sweet roasted grapes and salty gorgonzola, or a classic tomato and buffalo mozzarella Caprese.

Other special starters include an oven roasted confit artichoke heart with soft stracciatella cheese, beef carpaccio with smoked shoyu (soy sauce), and tuna tostada with avocado and fennel.

Seafood lovers can look forward to a plentiful raw bar with fresh oysters, shrimp, top neck clams, and tuna sashimi. If you enjoy sushi, treat yourself to hand-rolled nigiri showcasing colorful cuts of buttery-soft fish.

If you prefer your seafood served warm, the clam chowder station will be serving bowls of piping hot soup served alongside mini biscuits and a hot sauce bar.

At the buffet, you’ll find comforting Italian favorites like meatballs served with smooth whipped ricotta and marina. Prepare your palate for pastas like trofie cacio e pepe, rigatoni all’Amatriciana, and lasagna layered with wagyu beef bolognese and bechamel.

Help yourself to succulent slices of prime rib at the carving station, slow smoked to perfection.

Sides are served family-style and include mashed potatoes and a variety of roasted garden vegetables, sweet potatoes, and local mushrooms.

Leave Room for Dessert

At Rosen Shingle Creek, we pull out all the stops when it comes to dessert.

This year, we’re excitedly treating guests to an incredible assortment of sweets.

Finish (or start) your meal with delicate petit gateaux in flavors like apple almond cinnamon, passionfruit mango honey, black sesame cherry, and orange vanilla.

Elegant desserts like Meyer lemon tartlets, pineapple curd meringue and chocolate gianduja creme shooters, and mango lemongrass pâtes de fruits will add color to a beautiful dessert display.

If your sweet tooth aches for more, help yourself to tropical caramel or sour cherry bonbons, or help pick apart a magnificent macaron tower or croquembouche tower.
