Welcome to the greatest holiday extravaganza in Orlando! The festivities ramp-up with a couple of big events, so be sure to book your group holiday party with us and swing into the season at Rosen Shingle Creek’s inaugural Big Band Dinner Show Series. Michael Andrew and his Atomic 16-Piece Orchestra swing band are sure to bring out the dancer in you! You will not want to miss a blast from the past original ’50s Holiday Revue featuring Charlie Thomas & The Drifters, Delores K & the Crystals and Jay Siegel and the Tokens as they serenade audiences with hits such as “There Goes My Baby,” and “Under the Boardwalk.”

Rosen Shingle Creek is proud to announce the Inaugural Gingersnap Gingerbread House Competition to benefit The Florida Hospital Transplant House opening in 2015.

Join us as Rosen Shingle Creeks Executive Pastry Chef David Ramirez, winner of Food Network USA Pastry Challenge, Florida Hospital Foundation, community partners and Florida Hospital Gourmet Soiree’s committee members, Chef Emily Ellyn and Bill Sullivan facilitate a culinary gingerbread house competition.

We’re inviting all local chefs and hospitality professionals to participate in this fun holiday promotion while contributing to a great cause. All entry fees, donations and prize money will be donated to the Florida Hospital Transplant House.

What is the Florida Hospital Transplant House
The Florida Hospital Transplant Institute is a non-profit organization that strives to help Central Floridians in need of organ transplants. The Florida Hospital Transplant House provides a ‘Home away from Home’ for patients and their families during treatment and recovery. It will also provide opportunities for interaction with other families facing similar health challenges.

Chef Bios

Chef Robert August
The owner of Rocks, Sticks, and Hell LLC, Chef Robert August is a dedicated hospitality professional with a proven track record of leadership, production and a high commitment to providing customers with the ultimate experience and service. Chef August is experienced in complete project management for the retail, food and beverage, hospitality, catering, and travel and tourism industries and is accomplished in managing and staging large scale events, trade shows, concerts and outdoor festivals for major clients, national convention authorities and event promoters. He currently directs and oversees annual conventions and events for Fortune 500 companies and major food and beverage companies.

Known for his high standards and attention to detail, Chef August is repeatedly requested for events for many high profile dignitaries, including Prince Albert of Monaco, President George W. Bush and The Prime Minister of Israel. Other repeat clients include a host of athletes, trainers, celebrities, politicians and high level executives.

Chef Susan Boyle
Chef Susan Boyle has been the Professional Bakery Manager for Publix Super Markets since 2006. Her repertoire of confectionary skills includes gingerbread artist, cake decorator, and candy maker/caterer as well as cookbook author. Chef Boyle was the professional division Best of Show 2012 winner in the American Pie Council’s® (APC) National Pie Championships for her 1st place Coffee Toffee Crunch a Bunch Pie, for which she earned $5,000 in prize money, as well as major appliances. She also earned the Innovation Award from Crisco® for her 1st place Going Bananas Pie. Chef Boyle has served as a judge for numerous culinary events including the APC National Pie Championships, Gingerbread Magic and the North Carolina Blueberry Festival.

For three straight years, Chef Boyle was asked by the Orlando Restaurant and Lodging Show to be a featured chef for her award-winning Miniature Desserts: A Miniature Chef Camp for Kids ages 4-12. She competes in numerous competitions throughout the year, having won more than 150 ribbons. Chef Boyle holds many certifications for food styling, fondant figures and flowers, candy, pastries, chocolate and visual display.

Chef Boyle also gives back to the community, donating time and talent to several charities, including Ronald McDonald House, Make a Wish Foundation, United Way and March of Dimes. Chef Boyle says, “Baking and creating is my passion, exploring all levels of possibilities has always been my goal.”

Chef Lauren Cooke, CEPC, CEC, CHE
Owner and chef of Timeless Pastries, Chef Lauren Cooke has been employed in the culinary industry for over 40 years and has been teaching culinary arts for 12 years. Specializing in both savory and sweet creations, Cooke is one of 60 chefs in the United States to hold both Executive Pastry and Executive Chef Certifications. When asked about culinary arts, Cooke’s response was, “I love my profession, and passion is not a strong enough word to describe how dedicated I am to my career.”

Chef Valarie Enters
Valarie Enters has worked in the baking and pastry industry for 15 years. What began as a hobby baking and decorating cakes soon turned into a passionate career. Chef Enters’ drive and determination to create amazing edible creations has paved the way for many amazing opportunities; consequently, her work has been featured on Food Network Challenge and Good Morning America and in Good Housekeeping and the Washington Post. With numerous awards and accolades to her name, Chef Enters brings skill, insight and an innovative approach to any kitchen.

Chef Michael Harman
Chef Michael Harman has been the Executive Pastry Chef for Universal Orlando Resort for the past 18 years. A regular competitor in local culinary competitions, he has earned numerous gold medals. In 1988, Chef Harman earned a silver medal in the Culinary Olympics in Frankfort, Germany. In 2003, the award-winning chef earned distinction from Guinness World Records for creating the world’s largest wedding cake.

Chef Madison Ann Roberts
Chef Madison Ann Roberts is a recent culinary school graduate and Certified Culinarian who has voluntarily participated in many large non-profit events. Chef Roberts trained under a wonderful and inspirational chef who challenged her beyond the limits of what she thought she could do.

The theme of Chef Roberts’ gingerbread house is a Victorian winter doll house complete with a pond, yard, fence, and snowman. This loving home is filled with handmade furniture and decorations – a sweet home to live in no matter what the time of year. Utilizing gingerbread, fondant, sugar, candies and chocolate, this delightful home was created for the visual delight of all Rosen Shingle Creek guests.

Chef Geeta Seth
Chef Geeta Seth is both a seasoned chef and pastry chef. A native of New Delhi, India, Chef Seth is a wife, mother of two, and grandmother of two. At age 10, she started baking and learning how to cook with her mother in the family kitchen. However, culinary was not her first choice for a career – teaching was her passion. For 15 years, she taught primary and middle school children in India, gaining skills that would also aid in her culinary career.

In 1993, Chef Seth joined the culinary team at the Orange County Convention Center, working in Garde Manger. In 1995, when a pastry shop was added, she was transferred and trained by a senior pastry chef, where she learned how to bake in large volume and supervise the bakery.
